CASSIA CINNAMONUM CASSIA – Cinnamonum cassia. It is the dehydrated bark of the cassia tree, native to southern China and some areas of Southeast Asia such as Burma and Indonesia. It has a pleasant woody aroma and a characteristic spicy flavor, which makes it ideal for all kinds of cocktails, desserts and even stews and rice dishes.
